Have had this lying about for a while, anybody got any good recipes ??

To state the obvious, thai red curry ~~~~

Best to use a wok for this, rather than a frying pan, keep pan v hot when frying, but don't burn ingredients.

Finely chop large onion, fry in veg oil for about 1 minute

add 2 tablespoons of red curry paste,

add chicken, prawns, whatever, fry until cooked (chicken 5-10 mins, prawns 1 min)

Add chopped red pepper fry for another 2 mins, and fresh red cillis, including seeds (best to use bierds eye chillis).

Add 1 tin of coconut milk, bring to boil (but don't let it boil), then let simmer for 5-10 mins on low heat

Add 1 tablespoon of nam plam (fish sauce), 1 teaspoon of soft brown sugar, the juice of 1 fresh lime, and cook for another minute.

Serve with basmati rice and nan, garnish with fresh corriander.
