Don't see why not,

I prefer Spanish omlette, fry a little onion add some sliced peppers and mushroom then when they're almost done make a little space in the middle of it and drop in an egg or two. Bloomin lovely it is.

I think i'm right in calling it a Spanish omlette anyway.

Nope.

A classic spanish omlette (a tortilla) is onions and potato. They're cooked, then the beaten egg is added.
